胖達人事件 烘焙業：短空長多

（中央社記者林紳旭台北25日電）在烘焙業有「麵包達人」美稱、同時也是前台北市糕餅商業同業公會理事長張國榮今天說，胖達人事件對烘焙業是短空長多。

根據媒體報導，胖達人麵包店打著「天然」，卻添加食品級香精，引起消費者不滿，稱為「民生詐欺」，台北市衛生局前往稽查，台北地檢署也著手偵辦。

「只能欺騙一時，不能欺騙一世」，張國榮說，胖達人事件對烘焙業有好有壞，對消費者和業界未嘗不是一件好事，讓從業人員有所警惕，不應該掛羊頭賣狗肉。

他表示，相信胖達人添加的都是食品級，不敢用到工業級的原料，胖達人宣稱的和實際做的是兩回事。未來烘焙業應該更清楚告訴消費者，用什麼方式生產？今天吃下去的是什麼。

張國榮說，消費者現在的腦筋都是很聰明的，經過這次事件，會更認識烘焙業。

他指出，製作麵包過程中添加的酵母菌，如果是單一菌種，這代表是經由「工業化生產」而來，因為如果是自行培育，裡面會有多種酵母菌，單一菌種的發酵容易控制、容易發酵，也有業者添加乳化菌來增加風味，但都不能標榜「天然」兩個字。

張國榮表示，「天然酵母」是從日本引進的概念和名詞，其實應正名為「私房酵母」，也就是麵包師傅自己找食材發酵，發酵的同時會存在乳酸菌和醋酸菌，雖然不易控制，但材料相當「天然」，在歐洲、美國和日本等先進國家都運用的相當成熟。

張國榮指出，西方人和東方人吃法不同，西方人把麵包當成主食，東方人把麵包當點心；西方人喜歡吃稍硬的天然的麵包，東方人喜歡油多糖多的柔軟麵包。1020825

店家資訊 ： 店名：楊家紅豆餅 地址：台北縣板橋市文化路二段124巷28號 電話：02-82583868 板橋文化中心旁的楊家車輪餅 大家都知道爆漿的口感很好吃 但我今天去買 發現一件事情 我是併持著中立的立場描敘 希望有心人士不要挑撥對立立場 就是老闆們(親戚們)在操作車輪餅的時候 放在前面放涼後 客人點餐之後 老闆們皆是使用徒手抓車輪餅放進紙袋 然後不管你給鈔票還是找你零錢 都是使用同隻手作業 就連今天看到第三代小兒子有出來幫忙 更是如此 在場看了十幾分鐘 皆不見老闆們清洗雙手 希望的事情為 楊家車輪餅開業至今賺了不少 希望不要為了買個夾子這點小錢壞了商譽 (或是懶得使用夾子) 希望可以改進 以上描敘完全按照事實 並沒有註明是非對錯 只是讓網友們知道事實罷了 如果您不介意 大可忽略此文章 但我相信在意的網友有很多 因此希望有心人士不要挑撥此文章的立場 謝謝 -- ※ 發信站: 批踢踢實業坊(ptt.cc) ◆ From: 1.34.152.224

  • 臺中市長胡志強參加民政業務志工表揚活動

臺中市長胡志強是否參選連任？備受各界關注。有媒體報導指出有四成民眾並不支持他，但胡市長表示，包括最新民調在內，他看到的民調支持度都是他最高，這是事實，有傳言他「落後二位數以上」，好像都不是事實。至於何時宣布參選？他也強調七月就鼓勵大家表態，不能再說他影響別人，他也呼籲，應團結支持初選機制支持度最高者參選。

胡市長23日在參加102年度民政業務志工表揚活動，會前他接受訪問表示，目前在他看過的民調中，仍是他的支持度最高，包括媒體今日報導的也是，這是事實。民間傳言他的民調「落後二位數以上」，好像都不是事實嘛。日前他訪問新加坡，有人問他誰民調最高？他就這樣告訴對方。

一直有傳言說胡市長要「到臺北做官」、「要更好的位置」，他說，這樣的說法他常常聽到，也對民調產生了一定的影響力，如果回頭問他要不要選？是否支持？他認為已經有了「一定的顯示度」。

至於何時宣布參選？胡市長表示「已說過一百遍了！」他說過會提前兩個月宣布，且今年七月起他就鼓勵大家表態、競爭，因此現在不能再說因為他沒有表態，而影響別人表態。他一直鼓勵大家表態，尤其是國民黨部分，若沒有表態要如何參選呢？ 對於是否應支持初選機制支持度最高者參選？胡市長則堅定回答「對，團結第一！」
